Lemon Rice Recipe

Today we share with you how to make the lemon rice recipes, lemon rice recipe is one of the most famous south Indian rice. This is an easy & quick lemon rice recipe made with basic ingredients like fresh coconuts, lemon juice, and rice. Rice is much-loved stapled in South India.

Ingredients

  • Roop Mahal Basmati Rice : 250gm
  • Channa Dal: 10gm
  • Urad Dal: 10gm
  • Hing: a generous pinch
  • Mustard Seeds: 8-10 gm
  • Oil or Ghee: 20 gm
  • Whole dried red chilies: 5 Nos
  • Curry leaves: 25-30 Leaves
  • Roasted peanuts: 50 gm
  • Turmeric: 1/2 spoon
  • Salt to taste
  • Lemon Juice: 2 lemon

Garnish

  • Grated fresh coconuts: 15gms

Instruction for cooking lemon rice

  1. Rinse and gently rub the rice under fresh water till the water runs clear.
  2. Soak the rice in freshwater for 1 hour approximately.
  3. Bring the water to boil in a saucepan. Add soaked rice and some salt to give the rice a salty flavor.
  4. Let it come to boil again. Reduce heat and let the rice cook completely.
  5. Strain the rice and keep it aside.
  6. In a pot, heat up the oil on medium-high heat.
  7. Add channa dal & urad dal and stir continuously till it cook properly and you get a light golden color.
  8. Now add hing and mustard seeds.
  9. When the mustard seeds start crackling, add red chilies and curry leaves.
  10. When the curry leaves start to splutter, add turmeric, peanuts, and salt.
  11. Finally, add boiled rice into the pan and toss well along with all the ingredients till it get enough hot.
  12. Now sprinkle lemon juice all over the rice and again toss for a minute.
  13. Serve hot with grated coconut on top.
